Friday Favorites




Happy Friday! This has been such a long week and I am so glad that the weekend is here. Lets hop right in to my favorites from the week.

O N E | Jack and I snuck away to the pool last night to swim and have dinner with some friends. These two seriously are like an old married couple. They were dancing, and twirling, and didn't have a care in the world. Everyone needs to have a friendship like this. 


 T W O | I've really been trying to do some fun things this summer and on Wednesday night Jack had a swim lesson in the evening. Since it was just the two of us I told him we could get a treat if he had a good lesson, he wanted to share it with nana and grandaddy so we picked up ice cream cones and stopped by and enjoyed them on the porch!


T H R E E | Another favorite is the 3.5 year old personality. He is really into bad guys and pretend action play. This particular morning he was a police officer fighting off the bad guys. If only you could have seen him running around the driveway with that sword trying to fight off everyone. It was cracking me up!

F O U R | Bet you thought I had forgotten all about Grahammy. He is so busy these days that it's impossible to get him to sit still for a picture. He had a great time at story time this week with his little buddy!


F I V E | I came across this sometime this week and it really made me laugh. Can anyone else agree?

S I X | And a bound favorite, this verse! It has been a favorite this week as we still process and move forward with all that has been going on. I plan on sharing a little bit more about that next week. I hope that maybe this will speak to someone else who reads it and give them the hope they are needing!


I hope you have the best weekend! We will be here and hopefully hitting up the pool some and maybe a date night!

What's Hap-pinning Wednesday- Easy Beef Enchiladas

Coming at ya'll with an easy week night recipe! I don't know about you but I love mexican food. I could eat it every night. We definitely have a version of it at least once a week, if not more. Since Tuesday is Taco Tuesday I decided to make enchiladas. This is so quick to throw together and I was able to do it the very end of Graham's nap and it was ready to pop in the oven at dinner time. Bonus, there are some veggies thrown in that most kids wouldn't even notice

Shopping List:

* 1 lb ground beef (chicken or turkey will work too)
* 1-2 zucchini finely diced
* 1/2 chopped onion
* 1 big can red enchilada sauce (you can make your own or go the lazy girls route and do store bought, what I did) 
* 10 flour tortillas
* shredded cheese (fresh grated is the best!)

Steps: 

* saute' the onion and zucchini until soft and then transfer to a bowl
* using the same pan brown your ground beef, drain fat and then add to the zucchini and onion bowl
* Shred your cheese...it really makes this so much better to use freshly shredded 

Assembly: 
*pour a little enchilada sauce in the bottom of a 9X13 baking dish
* using 1/4-1/2 cup scoop the beef mixture onto a tortilla
* top with 1 tablespoon enchilada sauce
* top with a sprinkle of cheese 
* roll the tortilla up and place seam side down in baking dish 
*repeat until the baking dish is full
* top with remaining enchilada sauce and shredded cheese 
*bake at 350 for 30 minutes or until warm and bubbly 














This is a favorite of ours and the leftovers are just as good heated up! You could add as many or little veggies as you want, I've also added black beans and corn before too. Get creative!

Weekending

Hey friends,

Sorry for my lack of posting last week. We got some very unexpected news early last week that has rocked our world. I plan on posting about this at some point but right now it's so fresh and we are still trying to process. Patrick, the boys and I are ok! Please keep our whole family in your prayers over the coming days and weeks. But also know that I may be taking a bit of a break or stepping back for a little bit, but I will be back blogging full force in no time!

We had a very low key weekend. I'm slacking in the picture taking lately...I really need to step up my game!

Friday //

Jack had a swim lesson that morning and did so well! He is learning to kick and blow bubbles. Our focus is to get him comfortable especially with getting his face wet, something he even hates to do in the bathtub.


Friday evening our friends came over for an early dinner of pizza. I just love that Jay and Tate love my boys so much. They were so sweet playing with them.

Saturday //

Saturday morning we picked up doughnuts and headed over to my in-laws for a bit. We enjoyed sitting on the porch.




Jack and I headed to a birthday party for the cutest twin girls in his class. It was so hot outside but we had a great time.


Saturday evening Patrick and I decided on a whim to try and get a sitter so we could go out. Luckily we have a great list of sitters and were able to have one come. We went out to dinner and after over to our friends for a bit. It was nice to get away just the two of us.




Sunday //

Jack and I headed to church. Our church does not offer childrens church during the summer so this was his first Sunday sitting with me the entire hour. I packed a book bag full of quiet activities and for the most part he did well. I don't know much of what the sermon was about but it was nice to have him sitting with me.


We had a lazy afternoon and then went over to my in-laws for supper. Patricks aunt is in town so its been fun visiting with her. The boys just love Aunt Patsy!

Crafts for Kids: 
These are all toddler friendly crafts that don't require a lot of steps or time. Because, lets be honest, when we're dealing with toddlers their attention span isn't the longest! I love anything with a handprint so you know I had to include some of that!

What would a holiday be without something yummy? I've picked some of the treats that I would love to have at a cookout over the Fourth of July weekend. Now, I don't like watermelon {gasp!} but my kids will gobble it up and these cute cut out stars are just darling! I think the popcorn mix is going to be on my list of things to make to take with us to the beach!

$10 at Target- June

Hey ya'll! I hope you had a great weekend and all the daddies in your life were celebrated. We had a great weekend and rounded it out celebrating all the dads in Patrick's family with a cookout! Today is our $10 at Target link up, I do hope you will join in! 




I've got another random assortment of things that I picked up this month. My goal was to really try and stay at $10



I needed to get something to wrap Patricks Father's Day gift. I love the bags that Target has, they have all different colors, I went with the tradition brown paper this time. I also found this cute tissue paper that was all about dad.


Of course the first thing I do when going into Target is browsing the dollar spot. I don't do a ton of decorating for the Fourth of July but these little flags caught me eye. I think I'm going to put them in the two flower pots I have that flank the side of my front door.


The last thing I got is some water guns. Jack has been begging me to get them since he found some at the pool the other week. He and his buddies have the best time with them so I decided to be a fun mom and surprise him with them. The sheer excitement on his face was well worth it! "OH man, thanks mom! These are so cool! Thank you so much! I love you mom". It was the sweetest moment and the reason that I love to surprise him.

Friday Favorites!


Friday, I'm so glad to see you! This week has seemed so long. I don't know why but I've felt like it's been Friday for about 3 days now. Maybe its just Summer? We've had such a fun week!

My favorites from the week...

O N E | The boys have had such a fun week at "camp". I love seeing all the photos that are posted. They spent the week working on Father's Day crafts and having a great time!






T W O | We have been having a great time going to the pool in the afternoons after naps! Jack is a little fish and loves swimming with his buddies. He even started jumping off the side all by himself yesterday! I will say that Graham hates the pool! I remember Jack hating it at this age as well. I'm thankful for my babysitter because she will go with us and then after 30 minutes when Graham is ready to go home she will bring him home. I don't want Jack to miss out on the pool and I'm so thankful I've got Anna to help us! 





T H R E E | Our movie theater offers a kids movie at 10am on Mondays and Wednesdays. It's $4 and you get popcorn, gummies and a drink! We saw The Lorax last week and next week they are playing Trolls. It was the first time I've taken Jack to the movie and he did so good! You can't beat $4 for a movie. Check out your local theaters, I'm sure they are doing the same! 


F O U R | I've said it so many times but our babysitter is seriously a jack of all trades! She has gotten into sewing childrens clothes. She made this precious jon jon and just finished a cute sun-bubble. I don't hate that she needs a model and takes the best photos! win/win for me! 




F I V E | I have been wanting a new side table for my den. The one we had was given to me years ago when I first graduated college and was moving into an apartment. I was happily surprised when I walked into my friends shop this week and found this beauty for sale. It fit's perfectly in the space and I love that it has shelves, I just need to figure out what I'm going to put on them! 


S I X  | The best favorite of this week is our Daddy! We are so looking forward to celebrating him Sunday for Father's Day! He is simply the best and we couldn't get through a day without him. The boys were too excited to wait to give him their goodies from  camp this week, so at lunch yesterday they had them waiting on him! My favorite is the mosaic print they did of their daddy. Jack said "I gave him red hair like you dad!" 



I hope ya'll have a great weekend! Jack is going "camping" with his grandaddy tonight and we have a date night planned! We will be celebrating Patrick and the other daddies in our family on Sunday.
